Today is a coolish day, with Fall vibes that makes one crave comfort foods. I decided a rich, gooey, chocolaty Texas Sheet Cake would hit the spot! Piddling on the computer a bit, and came across a folder with blogs from Multiply. The very first file that opened was “Let Them Eat Cake.”

Made a chill run up my spine.

October 28, 2006 “LET THEM EAT CAKE”

Today is very Fall-like/early winterish so it seems that a nice comfort food is in order.
Nothing fights the winter blahs like a good rich gooey cake!
Texas sheet cake has been around for quite a while but the recipe varies. This version is an original I believe. I got it years ago at a Junior Women’s Club Taste-In.
CAKE
2 sticks margarine
4 tablespoons cocoa
1 cup water
2 cups all-purpose flour
2 cups sugar
1/2 teaspoon salt
2 eggs
1/2 cup sour cream (for this I substitute 1/2 cup Carnation evaporated milk plus 1 and 1/2 teaspoons of vinegar or lemon juice.)
1 teaspoon baking soda
1 teaspoon vanilla

Combine margarine, cocoa and water in saucepan and bring to a boil.Remove from heat and add flour, sugar and salt. Then stir in eggs, sour cream and soda.
Pour into a 9×13 pan and bake at 350* for 30 minutes. (The original method is to bake in a cookie sheet or petit four pan at 375* for 22 minutes, but this seems to dry out too much to suit me.)
Remove from oven and ice immediately.

ICING

1 stick margarine
4 tablespoons cocoa
1 pound confectioners sugar
1 teaspoon vanilla
6 tablespoons milk
1 cup chopped pecans

Combine margarine, cocoa and milk in sauce pan and bring to a boil. Remove from heat and add sugar, vanilla and pecans. Pour over cake in pan.
Let cool and enjoy.

Veroโ€ฆ..Good choice Vic. Since the icing is poured on hot and runny the corners get the most so its about an inch thick there. Lucky you! lol

Ok Vero, reading through that blog it seems that you were dishing up your cake to everyone but me. All I got was a watch the waist line, lol.You know I’m hungry tonight. I’m going back to check on that stew.

I just posted a fall comment, as the garden slows down I’m finding comfort in the kitchen. I saved this cake recipe to try, hopefully this weekend. It’s perfect, thank you Vero!
