I had hoped to grab some pics of what is all blooming here, but with the wind and rain, the delicate blooms of iris, peonies, roses, etc, have taken a bit of a beating. They are on the tail end of their bloom season as well and it won’t be long before the daylilies will be sending up scapes. I will try and do better about grabbing more bloom pics then. For now, just a couple pics of the visiting hummers.

I came across this song on Youtube the other day, and I had forgotten just how good it is! I really love the horns and the back-up singers along with the amazing vocals of Annie Lennox. I won’t be bothering to try and view the eclipse here in Nebraska since we will only be able to get a partial view of it. But for today’s Music Monday, I have to include the classic, “Total Eclipse of the Heart”. It’s been years since I saw the video and I had forgotten how quirky it was.

I had a request by one of my brothers for lemon bars. So I made a batch last night. I have a couple of different recipes I use, and this is one of the more traditional recipes.
Lemon Bars
Base:
2 cups all-purpose flour
1/2 cup powdered sugar
1 cup margarine or butter, softened
Filling:
4 eggs, slightly beaten
2 cups sugar
1/4 cup all-purpose flour
1 teaspoon baking powder
1/4 cup lemon juice
Frosting:
1 cup powdered sugar
2-3 Tablespoons lemon juice
Heat over to 350 degrees. In large bowl, combine all base ingredients at low speed until crumbly. Press mixture evenly in bottom of ungreased 9 x 13-inch pan. Bate for 20 to 30 minutes or until light golden brown.
Meanwhile, in large bowl, combine all filling ingredients except lemon juice; blend well. Stir in lemon juice. Pour mixture over baked base.
Bake for an additional 25 to 30 minutes or until top is light golden brown. Cool 1 hour or until completely cooled.
In small bowl, combine powdered sugar and enough lemon juice for desired spreading consistency, blend until smooth. Frost cooled bars. Cut into bars.
